After we came home from being away for a few days this week, we found three and a half very brown bananas in the kitchen. What does one do with overripe bananas? Make banana bread, of course! (Or, if you’re feeling ambitious, make my banana cupcakes, the recipe for which can be found here.) This recipe was very simple and came out great. The only change I made was the addition of the chocolate chips.
May your old bananas never go to waste!
Chocolate-Chip Banana Bread
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
1/2 cup chocolate chips
Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour, mix. Mix in chocolate chips (you may want to add some extra.)
Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
Makes one loaf.
